Preparation
- We start by frying off our mushrooms in a tsp of oil until golden brown. You may need to do this in batches so set aside while you do the rest.
- Finely chop your onion, garlic, chilli and ginger for kick, then add to sweat over a medium heat in 1 tbsp oil until soft and fragrant.
- Add in your turmeric powder for warmth and tomato puree for richness and cook off until the tomato paste is darker. Slowly add in your spinach, a handful at a time to wilt and then your cooked mushrooms and roughly chopped tomatoes. Add a good pinch of salt and black pepper too.
- Give everything a good stir and then let it bubble away for 20-30 minutes until soft and cooked through.
- In the meantime, cook your rice according to pack instructions and then fold through some very finely chopped parsley. Serve!
