I’m dreaming of a white Christmas – mojito that is! It’s packed with all the rum, mint and lime you’d expect of a mojito, plus coconut milk and pomegranates for a festive twist.
White Christmas mojito

- 1 lime
- 1 handful fresh mint (plus extra to garnish)
- 50 ml coconut rum
- 50 ml white rum
- 1 tbsp sugar syrup (see Tip)
- 50 ml coconut milk
- 1 dash soda water
- 1 tsp pomegranate seed
Preparation
Squeeze the juice from the lime and add to a cocktail shaker with the mint leaves, then use the end of a rolling pin or a cocktail muddler to crush the mint. Add the coconut rum, white rum, sugar syrup, coconut milk for richness and a handful of ice cubes. Shake well for 1 minute.
Fill two tumblers with ice and strain the zingy cocktail into the glasses. Top up with a splash of soda water and serve garnished with a sprig of mint and some pomegranate seeds.
Put 100g caster sugar in a pan with 50ml water. Heat over a gentle heat until the sugar has dissolved. Remove from the heat and set aside to cool. Makes enough for 6 tablespoons of syrup.
