Zingy salmon and butterbean salad
This zingy salmon and butterbean salad is quick, easy and full of summer flavours. It would make a great side dish to any barbecue or alfresco lunch.
1. Tip the handfuls of mixed salad leaves into a large bowl. Drain the can of butterbeans and add to the salad for bulk , tossing well to combine.
2. To add punch, finely slice the red onion and mix through the salad followed by the smoked salmon, roughly torn into pieces.
3. Drizzle with French Dressing for kick and garnish with chopped lemon wedges to squeeze just before serving, for added zing.
