Who doesn’t love eggs and avocado for breakfast? These baked avocados are best served with a drizzle of olive oil and a sprinkle of topping – chopped bacon, parsley or crumbled feta are some of our favourites.

  1. Preheat the oven to 200°C/180°C fan/gas mark 6.
  2. Half and deseed the avocados and scoop out a tablespoon from each (save this for another recipe, if you like).
  3. Crack an egg into each half and arrange across a baking tray. Place in the oven and bake for 15 - 20 minutes, until the eggs are cooked but the yolk is still a little soft.
  4. Drizzle over a little olive oil and divide between plates. If you like, garnish with extra toppings such as bacon, lemon zest, feta, parsley, chilli or coriander.
