If you’ve just finished your third helping of Christmas dinner and are wondering whether to go back for yet another sausage, hold off so you can make this salad instead! A kind of deconstructed take on pigs in blankets (if you want to get cheffy about it…), this salad breathes new life into leftover sausages and ham, perfect for the Boxing Day spread.
- Roughly chop the sausages and ham. Heat the oil in a pan over a medium-high heat and gently fry the sausages, ham and rosemary. Add the maple syrup and mustard, then cook for another 3–5 minutes, until stick and caramelised.
- Meanwhile, arrange the salad leaves over a serving platter and drizzle over some French dressing. Scatter the warm sausage and ham pieces over the top, garnishing with the Stilton and walnuts.
