1 Place the potatoes in a large bowl, that will give the dish bulk, drizzle over the oil and sprinkle over the salt. Rub all over the potatoes and into the skin using your hands. The oil and salt will give the potatoes some added warmth and kick.
2 Arrange the potatoes in the base of the Air fryer basket. Set the air-fryer to 200ºC and cook for 40-45 mins (turn half-way through cooking time). When ready they should be soft in the centre when pierced with a sharp knife.
3 Cut each potato in half, fluff up the potato flesh by cutting into it several times with a knife. Top each with a quarter of the butter for some creaminess, if using. Serve immediately or serve with the topping of your choice. See suggestions below.
