1 Mix the sweet chilli sauce and soy sauce together in a large bowl for some kick and tang. Add the salmon fillets and toss gently to coat. Cover, chill in the fridge and leave to marinade for 30 mins.
2 Meanwhile, toss the potatoes in 1 tbsp of the oil, arrange in the base of the air fryer. Set the air fryer to 200ºC and cook for 12-15 mins until just golden.
3 Meanwhile, mix the broccoli, sugar snaps and baby corn in the remaining oil. The sugar snaps will give some lovely and crunch and broccoli with provide extra earthiness. Use a large spoon to turn over the potatoes whilst mixing in the broccoli, sugar snaps and baby corn. Place the salmon on top, spoon over any extra marinade from the bottom of the bowl onto the top of the salmon. Cook for a further 8-10 mins until the salmon and vegetables are cooked through.
