This iced coffee recipe requires a little forward planning - namely making up the coffee ice cubes - but it's a worthwhile investment to have this refreshing drink on hand. Using coconut milk as the base not only tastes great, but it makes the drink suitable for vegans, too.

Preparation
Prepare the coffee ice cubes in advance. Dissolve the coffee granules in the boiling water to create a cup of strong coffee. Leave to cool a little, then pour into an ice cube tray and freeze for 4 hours.
Once set, add 5-6 coffee ice cubes to a tall glass. Stir the coconut milk well, then pour into the glass and mix a little with a straw before serving.
