Method
This iced coffee recipe requires a little forward planning - namely making up the coffee ice cubes - but it’s a worthwhile investment to have this refreshing drink on hand. Using coconut milk as the base not only tastes great, but it makes the drink suitable for vegans, too.
- Prepare the coffee ice cubes in advance. Dissolve the coffee granules in the boiling water to create a cup of strong coffee. Leave to cool a little, then pour into an ice cube tray and freeze for 4 hours.
- Once set, add 5-6 coffee ice cubes to a tall glass. Stir the coconut milk well, then pour into the glass and mix a little with a straw before serving.
