Preparation
Toast 4 plain folded flatbreads until lightly golden and spread over a generous layer of chunky guacamole for creaminess. Add the halloumi for chew, topping with basil leaves, pomegranate seeds for colour and a spoonful of pumpkin and sunflower seeds for crunch.
If making ahead, fold the flatbreads in half and store in an airtight container in the fridge until ready to eat., serving with lemon wedges on the side.
