    Make the most of your roast dinner leftovers with this ultimate beef sandwich recipe, the perfect Monday night meal. Thick slices of beef are layered with wholegrain mustard, gherkins, melted cheese and rocket, packed into one large loaf of bread that is sliced into quarters to serve.

  1. Slice the loaf of bread through the middle and spread both sides with a layer of mustard. Arrange the beef slices across the bottom layer of the bread and top with sliced gherkins.

  2. Cut the cheese slices into triangles or strips and layer them evenly across the top of the beef. Place under a hot grill until the cheese has melted.

  3. Scatter a handful of rocket leaves over the melted cheese and top with the other half of the loaf. Using a bread knife, slice the loaf into quarters to serve.
