Preparation
Stir the mayonnaise and mustard together in a large mixing bowl for creaminess and a bit of a kick. Coarsely grate the carrot, finely shred the cabbage and toss into the bowl for crunch. Grate in 2 of the apples (discarding the core) for sweetness. Mix well.
Heat the oil in a frying pan and fry the red onions on a medium heat for 5 minutes with a pinch of salt. Core and slice the other 2 apples into wedges. Add these to the pan with the brown sugar and cider vinegar and cook for 10 minutes, stirring occasionally, until sticky and caramelised.
Cook the Bockwurst or sausages following pack instructions. Split the hot dog rolls and toast the cut sides for crunch. Spoon a little apple slaw into each roll, followed by a sausage, then top with the caramelised apples and onions and serve.
