Who doesn’t love a slam-it-in-the-pan kind of dinner when it gets to the middle of the week? This spicy sausage all-in-one baked rice, packed with sunshine veggies, will hit the mark every time.
Smoky sweet potato and sausage bake

Preparation
Preheat the oven to 200°C, fan 180°C, gas 6. Heat the oil in a lidded flameproof casserole, cut the sausages into chunks and fry with the onion and sausages for 3-4 minutes, until the sausages are starting to colour.
Peel and roughly chop the sweet potato and add with the sliced pepper, for sweetness, and continue to cook for a further 3-4 minutes. Add the Cajun spice for kick and cook for another 2 minutes.
Add the white rice, chopped tomatoes and 600ml of water and stir to combine. Bring to a simmer and then cover and bake in the oven for 40-45 minutes, or until all the liquid has been absorbed and the rice and sweet potatoes are cooked.
