1. Heat the oven to 200c/180c fan/gas mark 6.
Steak with chilli honey glaze

Preparation
2. Mix the ingredients to form the dough, then lightly knead and diving into 4 balls to then roll onto rough circles (approx. 2-3cm thick).
3. Coat the sweet tomatoes in 1 tbsp oil and seasoning, then cook for 15-20 minutes. Make the glaze by mixing the honey for stickiness and chilli flakes for a bit of a kick together.
4. Heat a griddle pan then cook each flatbread for 1 minute on each side. Oil and season the steaks then cook for 1 - 2 minutes on each side and brush with the glaze as you go. Take steaks off the heat and brush with more honey before covering in foil for 10 minutes.
5. Mix the remaining honey with the steak resting juices. Spread the rich mascarpone onto the flatbreads before topping with the roasted tomatoes and sliced steak. Drizzle with the honey mixture.
