Preparation

    Make midweek meals more exciting with these loaded nachos. Piled up with onions, spices and plenty of cheese, the chopped chillies add a hint of heat to this sharing sensation. If enjoying as a main course, serve alongside two portions of your favourite vegetables.

  1. Fry the beef mince and diced red onion together, then add the sachet of fajita spices. Stir the tomato purée through, and add the stock. Cook everything together for 10 minutes.

  2. Layer up tortilla chips for bite, the beef and grated hot and spicy cheddar for richness in an ovenproof dish, and grill until melted and golden.

  3. Top with chopped red chilli for kick, chopped spring onion for crunch and sour cream to serve.
