Preparation

    1. Put the milk in a shallow pan with the sugar, vanilla extract and the ground spices for warmth. Bring to a simmer and simmer for around 10 minutes, to allow the milk to take on all that lovely flavour. Remove from the heat and add the bread to the pan. Leave to soak in the milk for a minute, taking care the bread doesn't get too soft. Transfer the soaked slices to a plate and leave to cool.

    2. Heat the oil in a large frying pan. Whisk the eggs in a shallow bowl and then give the bread slices a quick dunk in the egg. Transfer the slices to the pan and fry for 2-3 minutes each side until golden brown. You may need to do this in two batches if your pan won't take them all at once. If so, pop them in a dish and cover with foil while you cook the rest.

    3. To serve, drizzle the honey over the torrijas for sweetness – you want it to be nice and sticky. Serve warm with a scoop of dulce de leche ice cream for creaminess and an extra dusting of ground cinnamon.
